Cooking Rice

Rinse and Prepare Rice

Rinse 2 cups of jasmine rice under cold water until the water runs clear. This helps remove excess starch.

Cook Rice

In a large pot, bring 4 cups of water to a boil. Add the rinsed jasmine rice, reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Fluff Rice

After resting, uncover the rice and fluff it with a fork. Set aside to cool.

Stir-Frying

Heat Oil

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.

Cook Vegetables

Add minced garlic, diced carrots, bell pepper, and green peas to the skillet. Stir-fry for about 3-5 minutes until the vegetables are tender-crisp.

Add Protein

Stir in your choice of protein (chicken, shrimp, or tofu) and cook for an additional 2-3 minutes until heated through.

Add Eggs

Push the vegetable and protein mixture to one side of the skillet. Pour the beaten eggs into the empty space and scramble them until fully cooked.

Combine Ingredients

Add the cooled rice to the skillet. Pour in the soy sauce and mix everything together. Stir-fry for another 3-5 minutes, ensuring all ingredients are well combined and heated through.

Season to Taste

Add salt and black pepper to taste, and fold in sliced green onions just before serving.
