Dough Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until a shaggy dough forms. Allow it to cool for a few minutes.

Knead the Dough
Once the dough is cool enough to handle, knead it on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a small bowl, mix the finely chopped scallions, sesame oil, and salt until well combined. Set aside.
Pancake Assembly and Cooking

Roll Out the Dough
Divide the rested dough into four equal pieces. Roll one piece into a thin circle (about 8 inches in diameter) on a floured surface.

Add Filling
Spread a portion of the scallion filling evenly over the rolled-out dough, leaving a small border around the edges.

Form the Pancake
Starting from one edge, roll the dough tightly into a log. Then coil the log into a round shape and flatten it gently with your palm. Roll it out again to about 6 inches in diameter.

Cook the Pancake
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Carefully place the pancake in the skillet and cook for about 2-3 minutes on each side, or until golden brown and crispy. Repeat with the remaining dough and filling.

Cut the pancakes into wedges and serve hot with soy sauce or your favorite dipping sauce.
