Method

Preparation

  1. 1

    Prepare the Steak

Take the ribeye steak out of the refrigerator and let it sit at room temperature for 30 minutes. This helps the steak cook evenly.

  2. 2

    Season the Steak

Pat the steak dry with paper towels. Generously season both sides of the steak with the kosher salt and black pepper.

  3. 3

    Prepare Garlic

Peel and crush the garlic cloves with the flat side of a knife. Set aside.

Cooking

  1. 4

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

  2. 5

    Sear the Steak

Once the oil is hot, carefully add the steak to the pan. Sear for about 4-5 minutes on one side without moving it.

  3. 6

    Flip the Steak

Using tongs, flip the steak to the other side, and add the crushed garlic cloves and optional rosemary to the pan. Cook for another 4-5 minutes for medium-rare, adjusting the time as needed for your desired doneness.

  4. 7

    Add Butter (Optional)

If using, add the butter to the pan in the last minute of cooking. Spoon the melted butter over the steak for added flavor.

Resting and Serving

  1. 8

    Rest the Steak

Remove the steak from the skillet and transfer it to a cutting board. Let it rest for at least 5-10 minutes to allow the juices to redistribute.

  2. 9

    Slice and Serve

Slice the steak against the grain and serve hot. Enjoy with your favorite side dishes.
