Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.
Mix the Dough
In a large bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Shape the Pitas
Once risen, punch down the dough and divide it into small equal portions (about 8). Roll each portion into a ball and flatten into discs about 1/4 inch thick.
Second Rise
Cover the discs with a cloth and let them rest for about 30 minutes.
Preheat the Oven
Preheat your oven to 475°F (245°C) and place a baking stone or a baking sheet inside to heat.
Bake the Pitas
Carefully place the discs on the hot baking stone or sheet and bake for 5-7 minutes, or until they puff up and are lightly golden.
Cool and Serve
Remove the pita from the oven and let them cool on a wire rack. Serve warm or at room temperature.
