    Prepare the Nut Mixture

    In a bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.

    Prepare the Phyllo Dough

    Preheat your oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Unroll the phyllo dough and cover it with a damp towel to prevent it from drying out.

    Assemble the Baklava

    Brush a 9x13 inch baking dish with melted butter. Lay down one sheet of phyllo dough and brush it with butter. Repeat this process for about 8 sheets. Spread a layer of the nut mixture over the phyllo. Continue layering phyllo sheets (about 4 sheets at a time) followed by the nut mixture until all ingredients are used, finishing with about 8 sheets of phyllo on top.

    Cut the Baklava

    Using a sharp knife, cut the assembled baklava into diamond or square shapes, making sure to cut all the way through to the bottom.

    Bake the Baklava

    Bake the baklava in the preheated oven for about 45-50 minutes or until it is golden brown and crisp.

    Prepare the Honey Syrup

    While the baklava is baking, combine honey and water in a saucepan. Bring to a boil and then simmer for about 10 minutes. Remove from heat and let cool.

    Finish the Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled honey syrup over the hot baklava. Allow it to soak for several hours or overnight before serving.
