Prepare the Chicken
Preheat your oven to 375°F (190°C).

Season the chicken breasts with salt and black pepper. Place them in a baking dish and roast in the preheated oven for about 25-30 minutes, or until fully cooked. Remove from the oven, let cool, and then shred the chicken into bite-sized pieces.

Mix the Filling
In a mixing bowl, combine the shredded chicken, green chilies, and pepper jack cheese.

Drizzle in the balsamic vinegar and curry oil, then mix well until all ingredients are evenly coated. Taste and adjust seasoning with additional salt and pepper if needed.

Prepare the Puff Pastry
Roll out the puff pastry sheets on a lightly floured surface.

Cut each sheet into rectangles, roughly 6 inches by 8 inches, ensuring you have enough rectangles to fold over the filling.

Fill and Fold the Strudel
Place a generous amount of the chicken mixture in the center of each pastry rectangle.

Fold the sides of the pastry over the filling, then roll it up tightly from one end to the other to form a strudel. Ensure the seams are sealed well.

Place the strudels seam-side down on a baking sheet lined with parchment paper.
