Salad Preparation

    Cook Soba Noodles

    Bring a pot of water to a boil. Add the soba noodles and cook for about 5-7 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Steak

    Season the flat iron steak with salt and pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium rare, or until desired doneness. Let it rest for 5 minutes, then slice thinly against the grain.

    Prepare the Vegetables

    Slice the avocado into thin slices. Halve the cherry tomatoes. Chop the napa cabbage into thin strips. Set all prepared vegetables aside.

    Make the Dressing

    In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chili flakes to create a spicy Thai dressing.

    Fry Wontons

    In a small pan, heat oil over medium heat. Fry the wonton wrappers until golden brown and crispy, about 1-2 minutes per side. Remove and drain on paper towels.

    Assemble the Salad

    In a large bowl, combine the soba noodles, sliced steak, avocado, cherry tomatoes, napa cabbage, arugula, and cilantro. Drizzle with the Thai dressing and toss to combine.

    Top the salad with roasted peanuts and crispy wontons. Serve immediately.
