    Marinate the Chicken

    In a large bowl, combine buttermilk, paprika, garlic powder, onion powder, black pepper, and salt. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Frying Mixture

    In a separate bowl, mix together all-purpose flour and cornstarch. This will be used to coat the chicken.

    Heat the Oil

    In a deep skillet or large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat and Fry the Chicken

    Remove chicken from buttermilk marinade, letting excess drip off. Dredge each piece in the flour mixture until fully coated. Carefully place the chicken in the hot oil and fry in batches for 12-15 minutes, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

    Once cooked, remove chicken from the oil and place on a wire rack to drain excess oil.

    Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; a few lumps are okay.
