Method

Crab Cakes

    Mix Crab Cake Ingredients

    In a large mixing bowl, combine the fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, old bay seasoning, chopped green onions, beaten egg, panko breadcrumbs, salt, and black pepper.

    Combine Ingredients

    Gently fold the mixture until well combined, being careful not to break up the crab meat too much.

    Form Patties

    Form the mixture into round patties, about 2 inches in diameter.

    Cook Crab Cakes

    Heat olive oil in a large skillet over medium heat. Once hot, add the crab cakes in batches, being careful not to overcrowd the pan.

    Fry Crab Cakes

    Cook for about 4-5 minutes on each side or until golden brown and heated through.

    Drain Excess Oil

    Remove crab cakes from the skillet and place them on a paper towel-lined plate to drain excess oil.

Salsa Verde

    Blend Ingredients

    In a food processor, combine the chopped parsley, cilantro, minced garlic, chopped capers, lemon juice, olive oil, salt, and black pepper.

    Adjust and Serve

    Pulse until the mixture reaches a smooth consistency. Adjust seasoning if necessary.

Charred Jalapeno Aioli

    Char Jalapeno

    Preheat a grill or grill pan over medium-high heat. Place the halved jalapeno on the grill and char for about 5-7 minutes until softened and charred.

    Chop Jalapeno

    Remove the jalapeno from the grill and let it cool. Once cooled, chop it finely.

    Make Aioli

    In a bowl, whisk together the mayonnaise, minced garlic, lime juice, salt, and black pepper. Add the chopped jalapeno and mix until combined.

Pico de Gallo

    Combine Pico de Gallo Ingredients

    In a medium bowl, combine the diced tomatoes, diced red onion, chopped cilantro, minced jalapeno, lime juice, and salt.

    Let Sit

    Mix well and let it sit for about 10 minutes to allow the flavors to meld.

Arugula Salad

    Mix Salad Ingredients

    In a large bowl, combine the arugula, olive oil, lemon juice, salt, and black pepper.

    Toss to Coat

    Toss gently to coat the arugula evenly with the dressing.
