    Prepare the Potatoes

    Wash and slice the Kennebec potatoes thinly using a mandoline or sharp knife. Rinse the slices in cold water to remove excess starch, then pat dry with a paper towel.

    Fry the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Once cooled, crumble the bacon into small pieces.

    Fry the Potato Chips

    In the same skillet with the bacon fat, add olive oil and heat it to 350°F (175°C). Carefully add the potato slices in batches and fry until golden brown and crispy, about 3-4 minutes. Use a slotted spoon to transfer the cooked chips to a paper towel-lined plate, and immediately season with sea salt and black pepper.

    Make the Green Onion Pesto

    In a food processor, combine fresh basil, pine nuts, Parmesan cheese, garlic, and the green onions. Blend until smooth, adding olive oil as needed to reach a pesto-like consistency.

    Prepare the Bleu Cheese Fondue

    In a small saucepan over low heat, combine the bleu cheese and heavy cream. Stir continuously until the cheese melts and the mixture is smooth and creamy.

    Assemble the Dish

    On a large serving platter, layer the crispy potato chips. Drizzle the green onion pesto over the chips, followed by the crumbled bacon. Finally, serve the bleu cheese fondue warm on the side for dipping.
