Infuse the Bourbon
Start by infusing your bourbon with coffee. Combine 1 cup of bourbon with 1/4 cup of coarsely ground coffee in a sealed container. Let it steep for 12-24 hours, then strain out the coffee grounds.

Make the Cinnamon-Vanilla Syrup
In a small saucepan, combine 1 cup of water, 1 cup of sugar, 2 cinnamon sticks, and 1 tablespoon of vanilla extract. Bring to a simmer over medium heat, stirring until the sugar dissolves completely. Remove from heat and let it cool. Strain out the cinnamon sticks before using.

Mix the Cocktail
In a shaker, combine 2 oz of the coffee-infused bourbon, 1 oz of cinnamon-vanilla syrup, and 2 dashes of black walnut bitters. Fill the shaker with ice and shake well for about 15-20 seconds.

Serve
Strain the mixture into a chilled cocktail glass. Gently pour 1 oz of heavy cream over the back of a spoon to float it on top of the cocktail. Optionally, garnish with a sprinkle of cinnamon.
