    Rinse the whole porgy under cold running water and pat it dry with paper towels. Ensure the belly is clean and free from any entrails.

    In a small bowl, mix together salt, black pepper, and garlic powder. Rub this mixture generously inside the cavity and on the skin of each fish. Squeeze fresh lemon juice over the fish and sprinkle with chopped parsley. Allow the fish to marinate for at least 15 minutes.

    Heat the Oil

    In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat. The oil should be hot but not smoking; you can test it by dropping a small piece of bread into the oil, and if it sizzles, it’s ready.

    Carefully lower one fish at a time into the hot oil, avoiding splashes. Fry for about 6-8 minutes on each side, or until the skin is golden brown and crispy. Use a slotted spatula to gently flip the fish halfway through cooking. Remove the fish and place them on a plate lined with paper towels to drain excess oil.
