Method
Prepare the Burger Patty

Mash the Black Beans
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Combine Ingredients
Add the chopped mushrooms, grated yellow squash, bread crumbs, garlic powder, onion powder, cumin, salt, and black pepper to the mashed beans. Mix until well-combined.

Form Patties
Divide the mixture into 4 equal portions and form into patties. If the mixture is too wet, add more bread crumbs until it holds together.

Wash Lettuce
Rinse the lettuce leaves under cold water and pat them dry with a paper towel.

Slice Tomato
Slice the tomato into even rounds for easy layering on the burger.

Slice Roasted Peppers
If using jarred roasted red peppers, drain and slice them into strips.
Make Spicy Mayo

Mix Mayo and Sriracha
In a small bowl, combine mayonnaise and Sriracha sauce. Stir until well blended. Adjust the amount of Sriracha to taste for desired spiciness.
Assemble the Burger

On the bottom half of a burger bun, place a lettuce leaf, followed by the burger patty, sliced tomato, fried onions, and roasted red peppers.

Finish with the top half of the burger bun. Serve with spicy mayo on the side for dipping.
