Collard Greens Preparation

    Prepare the Collard Greens

    Remove the tough stems from the collard greens and chop the leaves into bite-sized pieces. Rinse thoroughly under cold water to remove any dirt or grit.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the Collard Greens

    Add the chopped collard greens to the pot, stirring well to combine with the onions and garlic.

    Add Broth and Seasonings

    Pour in the vegetable broth and add red pepper flakes, salt, and black pepper. Stir to mix everything evenly.

    Cook the Collard Greens

    Cover the pot and let the greens simmer on low heat for about 30 minutes, stirring occasionally, until they are tender. If the mixture gets too dry, add a little more broth or water.

    Taste and adjust seasoning if necessary. Serve warm as a side dish or over rice for a complete meal.
