Method

Preparation

  1. 1

    Prepare the Fish

Rinse the filet of sole under cold water and pat dry with paper towels. Season both sides of the fish with salt and black pepper.

  2. 2

    Make the Stuffing

In a mixing bowl, combine the cooked crab meat, bread crumbs, mayonnaise, Dijon mustard, chopped green onions, Old Bay seasoning, lemon juice, and minced garlic. Mix well until all ingredients are thoroughly combined.

Assembly

  1. 3

    Stuff the Fish

Lay the seasoned filet of sole on a clean surface. Place a portion of the stuffing mixture in the center of each filet. Carefully fold the filet over the stuffing to encase it.

  2. 4

    Secure the Fillets

Use toothpicks or kitchen twine to secure the edges of the stuffed filets, ensuring the stuffing stays inside during cooking.

Cooking

  1. 5

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 6

    Prepare for Baking

Place the stuffed filets on a greased baking dish. Brush the tops of the filets with melted butter and sprinkle paprika over them.

  3. 7

    Bake the Filets

Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

  4. 8

    Serve

Remove from the oven, let cool slightly, then serve the stuffed filets with your choice of sides.
