Method

Preparation

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, cumin, chili powder, paprika, salt, and black pepper. Mix well. Add the flank steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for better flavor.

Cooking

  1. 2

    Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Cook the steak for about 5 to 7 minutes on each side for medium-rare or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

  2. 3

    Sauté the Vegetables

In the same skillet, add a little olive oil if necessary, and sauté the bell peppers and onions over medium heat for about 5 minutes until they are tender. Add the minced garlic and cook for an additional 1 to 2 minutes until fragrant.

Assembly

  1. 4

    Assemble the Fajitas

Slice the rested flank steak against the grain into thin strips. On each flour tortilla, layer the sliced steak, sautéed vegetables, a dollop of sour cream, and guacamole. Sprinkle with fresh cilantro before rolling up the tortillas.
