Main Ingredients

Method

Preparation

  1. 1

    Prepare the Seafood

Rinse the shrimp, mussels, and squid under cold water. Pat dry with paper towels and set aside.

  2. 2

    Chop the Vegetables

Finely chop the onion and mince the garlic. Dice the red bell pepper.

Cooking

  1. 3

    Sauté the Aromatics

In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and diced red bell pepper, cooking for an additional 2 minutes.

  2. 4

    Add the Rice

Stir in the long-grain rice, allowing it to toast for about 2 minutes while stirring frequently.

  3. 5

    Add the Broth and Seasonings

Pour in the vegetable broth, and add salt, black pepper, and paprika. Stir to combine and bring to a boil.

  4. 6

    Cook the Rice

Reduce the heat to low, cover the skillet, and let the rice cook for about 15-18 minutes until the liquid is absorbed and the rice is tender.

  5. 7

    Add the Seafood

When the rice is almost done, add the shrimp, mussels, squid, and green peas. Stir gently to combine. Cover again and cook for an additional 5-7 minutes, or until the seafood is cooked through and the mussels have opened.

  6. 8

    Garnish and Serve

Once cooked, remove from heat, garnish with chopped parsley, and serve hot.
