Seafood

Method

Preparation of Ingredients

  1. 1

    Prepare the seafood

Rinse the clams and mussels under cold water to remove any sand or grit. Peel and devein the shrimp. Pat all seafood dry with paper towels.

  2. 2

    Prepare the aromatics

Finely chop the onion and red bell pepper. Mince the garlic.

Cooking

  1. 3

    Sauté aromatics

In a large skillet or paella pan, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes. Add the minced garlic and sauté for an additional minute.

  2. 4

    Add spices and rice

Stir in the paprika, saffron, salt, and black pepper. Add the rice and stir to coat it in the oil and spices for about 2 minutes.

  3. 5

    Add liquids

Pour in the fish stock (or water) and white wine (if using). Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the rice is nearly cooked.

  4. 6

    Add seafood

Gently nestle the clams, mussels, shrimp, and scallops into the rice. Cover and continue to cook for another 5-7 minutes, or until the seafood is cooked through and the clams and mussels have opened.

  5. 7

    Garnish and serve

Remove from heat and let it sit for a few minutes. Garnish with fresh parsley and serve with lemon wedges on the side.
