Method

Rice Preparation

  1. 1

    Rinse the Rice

Place the basmati rice in a bowl and rinse under cold water until the water runs clear. This removes excess starch.

  2. 2

    Soak the Rice

Soak the rinsed rice in water for 30 minutes, then drain.

  3. 3

    Cook the Rice

In a medium saucepan, add the soaked rice, 2 cups of fresh water, and 1 tsp of salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.

Flavoring

  1. 4

    Prepare the Saffron

In a small bowl, soak the saffron threads in a tablespoon of warm water or broth for about 10 minutes to release their flavor and color.

  2. 5

    Sauté Aromatics

In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, cinnamon stick, cardamom pods, and bay leaf, and sauté for another 2 minutes until fragrant.

  3. 6

    Combine Rice and Saffron

Once the rice is cooked, fluff it with a fork and add it to the skillet with the sautéed aromatics. Pour in the saffron mixture and gently mix everything together, ensuring the rice is evenly coated.

  4. 7

    Heat Through

Cook for an additional 2-3 minutes on low heat, allowing the flavors to meld together.

Garnish (optional)

  1. 8

    Toast Pine Nuts

In a small dry skillet over medium heat, toast the pine nuts until golden brown, about 3-5 minutes, stirring frequently.

  2. 9

    Garnish the Rice

Serve the saffron rice warm, garnished with the toasted pine nuts and chopped parsley if desired.
