    Preheat the Oven

    Preheat your oven to 400°F (200°C) to prepare for roasting the fish.

    Prepare the Marinade

    In a small bowl, mix together the olive oil, minced garlic, lemon juice, chopped parsley, salt, black pepper, and paprika to create a marinade for the fish.

    Marinate the Fish

    Place the red snapper filets in a shallow dish and pour the marinade over them. Turn the filets to coat them evenly. Allow them to marinate for at least 15 minutes.

Cooking

    Prepare the Baking Tray

    Line a baking sheet with parchment paper or foil for easy cleanup. If using, scatter the halved cherry tomatoes around the edges of the tray.

    Place the Fish

    Place the marinated red snapper filets on the prepared baking sheet. Top each filet with a couple of lemon slices and fresh thyme sprigs if using.

    Roast the Fish

    Roast in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

    Remove the fish from the oven and let it rest for a few minutes. Serve immediately with additional lemon wedges and a sprinkle of fresh parsley if desired.
