Preparation of Ingredients

    Boil the Potatoes

    Wash and peel the potatoes. Cut them into quarters and place them in a large pot. Cover with water and bring to a boil. Cook until tender, about 15-20 minutes.

    Chop the Vegetables

    While the potatoes are boiling, finely chop the celery, red onion, and sweet pickles.

    Prepare Hard-Boiled Eggs (if using)

    Place the eggs in a saucepan, cover with water, and bring to a boil. Once boiling, remove from heat and cover for 10-12 minutes. Then cool and chop.

Assembling the Salad

    Once the potatoes are tender, drain them and let them cool for a few minutes. Cut them into bite-sized pieces.

    In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika. Whisk together until smooth.
