Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Once cooked, drain the pasta and set aside.

Vodka Sauce Preparation

  1. 2

    Sauté Aromatics

In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic and chopped onion. Sauté for about 5 minutes until the onion is translucent and fragrant.

  2. 3

    Add Spices

Stir in the crushed red pepper flakes and sauté for an additional minute to infuse the oil with flavor.

  3. 4

    Incorporate Tomato Puree

Pour in the tomato puree and stir well to combine. Let it simmer for about 5 minutes, allowing the flavors to meld.

  4. 5

    Add Vodka

Carefully pour in the vodka, and let the mixture simmer for another 5-7 minutes. This will help to cook off the alcohol and deepen the flavor.

  5. 6

    Add Cream and Cheese

Reduce the heat to low, and stir in the heavy cream and grated Parmesan cheese until melted and well combined. The sauce should be creamy and smooth.

  6. 7

    Season the Sauce

Taste the sauce and add salt and black pepper to taste. If desired, add more crushed red pepper flakes for additional heat.

  7. 8

    Combine Pasta and Sauce

Add the drained penne pasta to the sauce, tossing to coat the pasta evenly with the vodka sauce.

  8. 9

    Garnish and Serve

Remove from heat, and stir in the chopped fresh basil. Serve immediately, garnished with extra Parmesan cheese if desired.
