Method

Preparation

  1. 1

    Prepare the Ingredients

Rinse the filet of sole under cold water and pat them dry with paper towels. Sprinkle salt, black pepper, and paprika evenly over both sides of the fillets. Squeeze lemon juice over the fillets and set aside to marinate for 15 minutes.

  2. 2

    Set Up Breading Station

In a shallow bowl, place the all-purpose flour. In another shallow bowl, beat the eggs. In a third shallow bowl, place the breadcrumbs.

Cooking

  1. 3

    Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until shimmering, about 5 minutes.

  2. 4

    Bread the Fillets

Dredge each marinated filet first in the flour, shaking off excess. Next, dip into the beaten eggs, allowing excess to drip off, and finally coat with breadcrumbs, pressing gently to adhere.

  3. 5

    Fry the Fillets

Carefully place the breaded fillets into the hot oil, cooking in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Use a slotted spoon to transfer the fillets to a plate lined with paper towels to drain excess oil.

Serving

  1. 6

    Serve

Serve the fried filet of sole immediately, garnished with additional lemon wedges if desired.
