Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the cleaned and cut calamari with salt, black pepper, garlic powder, and paprika. Mix well and let it marinate for about 15 minutes.

    Prepare the Breading Station

    In a separate bowl, whisk together the eggs and milk. In another bowl, mix the all-purpose flour and cornstarch. Set up a breading station with the calamari, egg mixture, and flour mixture.

Frying the Calamari

    Heat the Oil

    In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Calamari

    Dip each calamari ring into the flour mixture, then into the egg mixture, and back into the flour mixture to coat evenly.

    Fry the Calamari

    Carefully place the breaded calamari rings into the hot oil in batches. Fry for 2-3 minutes or until golden brown, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Cook the Marinara Sauce

    In a saucepan over medium heat, add olive oil and minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

    Add Tomatoes and Seasoning

    Add crushed tomatoes, oregano, salt, black pepper, and sugar. Stir to combine. Simmer for about 15-20 minutes, allowing the sauce to thicken. Stir in fresh basil just before serving.

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
