    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the tentacles and the innards, and then slice the bodies into rings about 1/2 inch thick.

    Soak in Buttermilk

    Place the sliced calamari in a bowl and cover it with buttermilk. Let it marinate for at least 30 minutes to tenderize the calamari.

Breading

    Mix the Dry Ingredients

    In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all dry ingredients are evenly incorporated.

    Coat the Calamari

    Remove the calamari from the buttermilk, shaking off any excess. Dredge each piece in the flour mixture until fully coated. Shake off any excess flour.

Frying

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Calamari

    Carefully add a few pieces of breaded calamari to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
