Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Cod
Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Fry the Chips
In a separate large pot, heat the vegetable oil to 325°F (160°C). Fry the potato sticks in batches for about 5-6 minutes until soft but not browned. Remove and drain on paper towels.

Final Fry
Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for another 2-3 minutes until golden brown and crispy. Season with salt immediately after frying.

In a small saucepan, cook the mushy peas according to package instructions. Once cooked, add butter and salt, mashing slightly to combine.
