    Prepare the Clams

    Rinse the clams under cold running water to remove any sand or debris. Soak them in water for about 20 minutes to help them expel any remaining grit. Drain and set aside.

    Chop the Garlic and Cilantro

    Peel and finely chop the garlic cloves. Rinse the cilantro under cold water, shake off excess moisture, and chop coarsely.

Cooking

    Sauté Garlic

    In a large pot or skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté for about 1-2 minutes, until fragrant but not browned.

    Add Clams

    Add the cleaned clams to the pot. Sprinkle salt and black pepper over the clams. Stir to combine with the garlic.

    Simmer the Clams

    Cover the pot and cook for about 5-7 minutes, shaking the pot occasionally. The clams are done when they have opened up. Discard any that remain closed.

    Finish with Cilantro

    Once the clams are cooked, remove the pot from heat. Stir in the chopped cilantro and let it sit for a couple of minutes to infuse the flavors.

Serving

    Serve

    Transfer the clams to a serving dish, spooning the garlic and cilantro oil over the top. Serve warm as an appetizer or main dish.
