Preparing the Dough

    Combine Wet Ingredients

    In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring the mixture to a boil over medium heat.

    Add Flour

    Once boiling, remove the saucepan from heat and add the all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Allow the dough to cool for about 5 minutes. Then, add the eggs one at a time, mixing until fully incorporated after each addition. The dough should be smooth and slightly sticky.

Preparing Cinnamon Sugar

    Mix Cinnamon Sugar

    In a small bowl, combine granulated sugar and ground cinnamon. Mix well and set aside.

Frying Churros

    Heat Oil

    In a large, heavy pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a candy thermometer to check the temperature.

    Pipe the Dough

    Transfer the dough to a piping bag fitted with a star-shaped nozzle. Once the oil is hot, carefully pipe strips of dough (about 4-6 inches long) directly into the oil. Don't overcrowd the pot.

    Fry Until Golden

    Fry the churros for about 2-3 minutes on each side until they are golden brown and crispy. Use a slotted spoon to turn them as needed.

    Drain and Coat

    Once fried, remove the churros from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still warm, roll them in the cinnamon sugar mixture until well coated.
