Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your pan over medium heat. Season the chicken breasts with salt and pepper. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

  2. 2

    Bread the Chicken

Dredge each chicken breast in flour, shaking off excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

  3. 3

    Fry the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and set aside.

Marinara Sauce Preparation

  1. 4

    Cook the Marinara Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in crushed tomatoes, oregano, basil, salt, and sugar. Simmer for 15-20 minutes, stirring occasionally.

Assembly

  1. 5

    Assemble the Chicken Parmigiana

Preheat your oven to 375°F (190°C). Place the fried chicken breasts on a baking sheet. Spoon marinara sauce generously over each piece, then top with shredded mozzarella cheese.

  2. 6

    Bake

Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.

  3. 7

    Serve

Cut the hoagie rolls in half and place a piece of chicken parmigiana inside each. Garnish with fresh basil leaves and serve hot.
