Broth Preparation
1. Prepare the Pork Bones
In a large pot, combine the pork bones and enough water to cover them. Bring to a boil over high heat for 10 minutes. This helps to remove impurities. After boiling, drain the bones and rinse them under cold water.
Chashu Pork Preparation
4. Prepare the Pork Belly
Roll the pork belly tightly and tie it with kitchen twine. In a pot, combine soy sauce, mirin, sugar, and water. Bring to a boil and then add the pork belly.
5. Cook the Chashu
Simmer the pork belly for about 2 hours until tender, turning occasionally. Remove from the pot and let it cool. Once cooled, slice into thin pieces.
Eggs and Noodles Preparation
6. Soft-Boil the Eggs
Bring a pot of water to a boil. Gently add the eggs and boil for 6-7 minutes. Remove and place in an ice bath to stop the cooking. Once cooled, peel the eggs and set aside.
7. Cook the Ramen Noodles
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
Assembly
8. Assemble the Ramen Bowl
In a serving bowl, add the cooked ramen noodles, pour over the hot broth, and top with slices of chashu pork, halved soft-boiled eggs, chopped green onions, nori sheets, and menma.
