Preparation and Cooking
Prepare the Jalapeños
Preheat your oil in a deep fryer or large pot to 350°F (175°C). While the oil is heating, prepare the jalapeños by slicing them in half lengthwise and removing the seeds and membranes for a milder taste.
Make the Filling
In a mixing bowl, combine the cheddar cheese, cream cheese, salt, and black pepper. Mix until well blended.
Stuff the Jalapeños
Spoon the cheese mixture into each jalapeño half, filling them generously.
Fry the Jalapeños
Carefully place the breaded jalapeños in the hot oil, a few at a time to avoid overcrowding. Fry for about 4-5 minutes, or until they are golden brown and crispy. Remove and drain on paper towels.
Prepare the Dijonnaise
In a small bowl, mix together equal parts mayonnaise and Dijon mustard to create a dijonnaise sauce for dipping.
Serve
Serve the hot stuffed jalapeños with the dijonnaise on the side.
