Prepare the Roast Beef

Preheat your oven to 325°F (163°C). Season the beef roast with salt and black pepper. Place it in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Sauté the Vegetables

While the beef is roasting, heat olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they begin to caramelize, about 5-7 minutes. Add the sliced mushrooms and continue to sauté until both the mushrooms and onions are golden brown, about 5 more minutes. Season with salt and pepper to taste.

Prepare Au Jus

In a small saucepan, bring the beef broth to a simmer. You can add the drippings from the roast to enhance the flavor. Keep warm until ready to serve.

Assemble the Hoagies

Once the roast beef is done, let it rest for 10-15 minutes before slicing it thinly. To assemble the hoagies, place some roast beef on each hoagie roll, top with sautéed mushrooms and onions, and sprinkle with shredded mozzarella cheese.

Toast the Hoagies

Place the assembled hoagies on a baking sheet and broil in the oven for about 2-3 minutes, or until the cheese is melted and bubbly.

Serve the toasted hoagies warm with a side of au jus for dipping.
