Prepare the Beer Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, whisking until smooth and well combined.
Prepare the Cod Fillets
Pat the cod fillets dry with paper towels. Season lightly with salt and pepper.
Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Batter the Cod
Dip each cod fillet into the beer batter, allowing excess batter to drip off.
Fry the Cod
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Assemble the Sandwich
Slice the hoagie rolls open and layer with lettuce, fried cod, and tomato slices. Add tartar sauce to taste.
