Prepare the Roast

Preheat your oven to 350°F (175°C). Rub the beef roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder on all sides.

Sear the Roast

In a large skillet over medium-high heat, sear the beef roast for about 4-5 minutes on each side until browned. This step enhances the flavor.

Roast in the Oven

Place the seared roast in a roasting pan and pour the beef broth around it. Cover the pan with foil and roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium rare.

Rest and Slice

Remove the roast from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute.

Prepare Au Jus

While the roast is resting, strain the broth from the roasting pan into a saucepan. Bring it to a simmer over medium heat to reduce slightly for a richer flavor.

Assemble the Sandwiches

Slice the toasted hoagie rolls and fill them with slices of roast beef. Serve with the au jus on the side for dipping.
