Instructions
- 1
Prepare the Ingredients
Gather all the ingredients. Drain the sauerkraut and pat it dry with a paper towel to reduce excess moisture.
- 2
Assemble the Sandwich
Lay two slices of light rye bread on a flat surface. Spread 1 tablespoon of Thousand Island dressing on each slice. Layer with corned beef, sauerkraut, and Swiss cheese. Top with the remaining slices of bread.
- 3
Toast the Sandwich
Heat a skillet over medium heat and melt 1 tablespoon of butter. Place the assembled sandwiches in the skillet and cook until the bread is golden brown, about 3-4 minutes. Flip the sandwiches, add the remaining butter, and cook the other side until golden brown and the cheese is melted, about another 3-4 minutes.
- 4
Serve
Remove the sandwiches from the skillet, cut them in half, and serve hot with extra Thousand Island dressing on the side.
