Prepare the Prime Rib
Preheat your oven to 450°F (232°C). In a small bowl, mix together salt, pepper, garlic powder, and chopped rosemary. Rub this mixture all over the prime rib roast. Drizzle with olive oil, ensuring an even coating.
Roast the Prime Rib
Place the seasoned prime rib on a roasting pan with the fat side up. Roast in the preheated oven for 20 minutes, then lower the temperature to 325°F (163°C) and cook for an additional 90 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
Rest the Meat
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This helps retain the juices.
Prepare the Au Jus
In a saucepan, add the beef broth and bring to a simmer. Scrape up any browned bits from the roasting pan and add them to the broth. Let it simmer for about 10 minutes to develop flavor.
Slice and Serve
Slice the prime rib into thin pieces. Serve on toasted hoagie rolls with a side of au jus for dipping.
