Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they begin to soften, about 3-4 minutes. Add the sliced mushrooms and continue to sauté until both the onions and mushrooms are golden brown, about 5-7 minutes. Season with salt and pepper.

Warm the Prime Rib

Add the sliced prime rib to the skillet with the onions and mushrooms, stirring to combine. Cook until the prime rib is warmed through, about 3-5 minutes.

Melt the Cheese

Once the meat is heated, evenly distribute the shredded pepper jack cheese over the top. Cover the skillet with a lid and reduce the heat to low, allowing the cheese to melt for about 2-3 minutes.

Toast the Hoagie Rolls

While the cheese is melting, preheat your oven to 350°F (175°C). Slice the hoagie rolls in half and place them on a baking sheet. Toast in the oven for about 5 minutes until lightly golden.

Assemble the Sandwiches

Remove the toasted hoagie rolls from the oven. Fill each roll with the prime rib, mushroom, onion, and melted cheese mixture. Serve hot with a side of au jus for dipping.
