Preparation and Cooking
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water, whisking until the batter is smooth and thick.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Batter and Fry the Mushrooms
Dip each mushroom into the batter, ensuring it is completely coated. Carefully place the battered mushrooms into the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.
Drain and Serve
Remove the fried mushrooms from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with ranch dressing and horseradish sauce on the side.
