In a medium bowl, pour the buttermilk over the calamari rings, ensuring they are fully submerged. Cover and let soak in the refrigerator for at least 30 minutes to tenderize the calamari.

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all ingredients are evenly distributed.

Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the breading mixture into it; if it sizzles, it’s ready.

Coat the Calamari

Remove the calamari from the buttermilk, allowing any excess to drip off. Dredge the calamari rings in the breading mixture, ensuring they are fully coated. Shake off any excess flour.
