Preparation

    Prepare the Marinade

    In a small bowl, combine the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Mix well.

    Marinate the Snapper

    Place the snapper fillets in a shallow dish and pour the marinade over them. Make sure the fish is well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Rice

    In a saucepan, combine 1 cup of white rice, 2 cups of water, and 0.5 tsp of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

    Cook the Vegetables

    In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the sliced bell peppers, zucchini, and red onion. Season with 0.5 tsp of salt and 0.5 tsp of black pepper. Sauté the vegetables for about 5-7 minutes until they are tender and slightly charred. Remove from heat and set aside.

    Grill the Snapper

    Preheat the grill to medium-high heat. Remove the snapper from the marinade and place on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Be careful not to overcook.

    Serve

    On a serving plate, place a scoop of rice, top with sautéed vegetables, and lay the grilled snapper on top. Garnish with additional fresh parsley if desired, and serve immediately.
