Prepare the Marinade
In a small bowl, combine the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Mix well.

Marinate the Snapper
Place the snapper fillets in a shallow dish and pour the marinade over them. Make sure the fish is well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Cook the Vegetables
In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the sliced bell peppers, zucchini, and red onion. Season with 0.5 tsp of salt and 0.5 tsp of black pepper. Sauté the vegetables for about 5-7 minutes until they are tender and slightly charred. Remove from heat and set aside.

Serve
On a serving plate, place a scoop of rice, top with sautéed vegetables, and lay the grilled snapper on top. Garnish with additional fresh parsley if desired, and serve immediately.
