Make the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gradually mix the flour into the eggs until a dough begins to form.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove and set aside.

Deglaze the Pan
Pour in the Italian brandy (or white wine) and cook for another 2 minutes, scraping any bits from the bottom of the pan. Add the cooked pancetta back to the skillet, and season with salt and pepper. Stir in grated Parmesan cheese and remove from heat.

Roll Out the Dough
Divide the rested pasta dough into quarters. Roll out each piece into thin sheets using a pasta machine or rolling pin. Cut into squares (about 3x3 inches).

Fill the Pasta
Place a small spoonful of the filling in the center of each pasta square. Fold the square diagonally to form a triangle and press the edges to seal. Ensure no air is trapped inside.
Cream Sauce

Prepare the Sauce
In a saucepan, melt the butter over low heat. Add the heavy cream and bring to a gentle simmer. Season with salt and pepper to taste.

Combine with Pasta
Cook the saccottini in boiling salted water for about 4-5 minutes or until they float to the top. Drain and add to the cream sauce. Toss to coat the pasta in the sauce.

Plate the saccottini, garnish with chopped fresh parsley, and serve immediately.
