    Prepare the Ingredients

    Start by cutting the pork shoulder into 1-inch cubes. Chop the onion, garlic, bell pepper, and carrots. Dice the tomatoes.

    Sear the Pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the pork cubes and sear until browned on all sides, about 8-10 minutes. Remove the pork and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and bell pepper. Sauté for 5 minutes until softened. Add minced garlic and cook for an additional minute.

    Add Remaining Ingredients

    Stir in the diced tomatoes, carrots, paprika, bay leaves, thyme, salt, and black pepper. Return the seared pork to the pot.

    Add Broth and Simmer

    Pour in the chicken broth to cover the ingredients. Bring to a boil, then reduce the heat to low. Cover and let simmer for 1.5 to 2 hours, until the pork is tender.

    Add Feta Cheese

    After the pork has become tender, crumble the feta cheese into the stew. Stir to combine and let cook for an additional 10 minutes.
