Prepare the Meat Mixture

Combine Ingredients
In a large mixing bowl, combine the ground beef and ground pork. Add the minced garlic, salt, black pepper, paprika, thyme, cumin, baking soda, and water (or beef broth).

Mix Thoroughly
Using your hands or a spatula, mix the meat and spices until well combined. The mixture should be sticky and cohesive.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Shape and Grill Mititei

Form the Sausages
Once chilled, remove the meat mixture from the refrigerator. With wet hands, shape the mixture into small sausages, about the size of a finger.

Preheat the Grill
Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

Heat Oil
In a large pot or deep fryer, heat the vegetable oil to 180°C (350°F).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil in batches, frying them for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Remove the fries from the oil and drain on paper towels. Sprinkle with salt to taste.

Plate the Dish
Serve the grilled mititei hot alongside the crispy fries. Optionally, add mustard or a side of pickles for an authentic touch.
