Steak Preparation

    Season the Steak

    Pat the ribeye steak dry with paper towels and season both sides generously with salt and black pepper. Allow it to rest at room temperature for about 30 minutes.

    Sear the Steak

    Heat a cast-iron skillet or heavy pan over medium-high heat. Add olive oil to the pan. When the oil is shimmering, add the ribeye steak. Sear for about 4-5 minutes on one side until a nice crust forms.

    Add Aromatics

    Flip the steak and add crushed garlic cloves and rosemary to the pan. Cook for another 4-5 minutes for medium-rare, basting the steak with the pan juices and aromatics.

    Rest the Steak

    Remove the steak from the pan and let it rest for at least 5-10 minutes before slicing.

    Boil the Potatoes

    Peel and chop the potatoes into evenly sized chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Cook the Garlic

    In the last 5 minutes of boiling, add the garlic cloves to the pot. This will soften the garlic and infuse its flavor into the potatoes.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy, adjusting the milk for desired consistency.

    Serve

    Serve the garlic mashed potatoes alongside the rested ribeye steak.
