Prepare the Ravioli Dough

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs and olive oil. Gradually mix the flour into the eggs with a fork until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.
Prepare the Lobster Filling

Combine Filling Ingredients
In a bowl, mix the chopped cooked lobster meat, ricotta cheese, Parmesan cheese, chives, salt, and black pepper until well combined. Set aside.
Make the Pink Vodka Cream Sauce

Sauté Aromatics
In a large skillet over medium heat, add olive oil and sauté the minced shallots and garlic until softened, about 2-3 minutes.

Add Tomatoes and Vodka
Stir in the crushed tomatoes and vodka, cooking for 5 minutes to let the alcohol evaporate.

Finish the Sauce
Reduce heat to low, add heavy cream, salt, black pepper, and red pepper flakes. Simmer for 10 minutes, stirring occasionally, then stir in the fresh basil.
Cook the Seafood

Prepare Shrimp and Lobster
In a separate pot, bring salted water to a boil. Add the shrimp and lobster tail, cooking until shrimp are pink and opaque and lobster is heated through, about 3-5 minutes. Remove from heat and set aside.
Assemble and Cook Ravioli

Roll Out Dough
Roll out the rested dough using a pasta machine or a rolling pin until thin. Cut out circles or squares for ravioli.

Place a small spoonful of lobster filling in the center of each ravioli piece. Brush the edges with water, fold over, and seal tightly.

Cook Ravioli
In a pot of boiling salted water, cook the ravioli for 3-4 minutes until they float to the surface. Remove with a slotted spoon.
Combine and Serve

Gently toss the cooked ravioli with the pink vodka cream sauce and add the cooked shrimp and lobster tail. Serve immediately.
