Octopus

Whipped Feta

Method

Preparing the Octopus

  1. 1

    Boil the Octopus

In a large pot, bring salted water to a boil. Add the cleaned octopus and simmer for about 45 minutes until tender. Remove from the pot and let it cool slightly.

  2. 2

    Marinate

Once the octopus is cool enough to handle, cut it into individual tentacles. In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the octopus and marinate for at least 30 minutes.

  3. 3

    Grill

Preheat your grill to medium-high heat. Place the marinated octopus on the grill and cook for about 3-4 minutes on each side until nicely charred.

Making the Whipped Feta

  1. 4

    Blend the Ingredients

In a food processor, combine crumbled feta cheese, softened cream cheese, Greek yogurt, olive oil, minced garlic, and black pepper. Blend until smooth and creamy.

  2. 5

    Adjust Seasoning

Taste the whipped feta and adjust the seasoning if necessary. Set aside until ready to serve.

Assembling the Dish

  1. 6

    Prepare the Dish

On a large serving plate, spread a generous layer of whipped feta.

  2. 7

    Add the Octopus

Place the char-grilled octopus tentacles on top of the whipped feta.

  3. 8

    Garnish

Scatter halved cherry tomatoes, rinsed capers, and chopped fresh parsley over the dish. Drizzle with extra virgin olive oil just before serving.
