In a large bowl, combine the ground beef and ground pork. Add the finely chopped onion, minced garlic, paprika, salt, and black pepper. Mix thoroughly with your hands until all ingredients are well combined.

Divide the meat mixture into equal portions and shape them into patties. Aim for about 6 patties, each roughly 1 inch thick.

Sauté the Eggplant
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced eggplant and sprinkle with 0.5 tsp of salt. Cook for about 5-7 minutes, stirring occasionally, until the eggplant is soft and golden.

Add Garlic and Tomatoes
Add the minced garlic and cherry tomatoes to the skillet with the eggplant. Season with 0.5 tsp of black pepper. Continue to sauté for another 3-5 minutes, until the tomatoes are blistered and slightly softened.

Remove the skillet from the heat and sprinkle the sautéed vegetables with chopped fresh parsley. Serve the sautéed vegetables alongside the grilled pljeskavica patties.
