Preparing the Pljeskavica Patty

Mix the Meats
In a large mixing bowl, combine the ground beef and ground pork.

Incorporate Feta
Gently fold in the crumbled feta cheese into the meat mixture.

Form the Patties
Divide the mixture into equal parts and shape them into thick patties. Set aside.
Making the Dough

Prepare the Dough
In a large bowl, mix the all-purpose flour and salt together. Add the cold, cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Add Water
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
Cooking the Sautéed Vegetables

Sauté Eggplant
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed eggplant and sauté until tender and slightly charred, about 5-7 minutes. Season with salt and pepper, then transfer to a plate.

Sauté Tomatoes and Mushrooms
In the same skillet, add another tablespoon of olive oil. Add the halved cherry tomatoes and sliced mushrooms. Sauté for 5-6 minutes until the tomatoes are soft and mushrooms are browned. Drizzle with balsamic vinegar, stir, and remove from heat.
Assembling and Baking

Preheat Oven
Preheat your oven to 200°C (400°F).

Roll Out the Dough
On a lightly floured surface, roll out the chilled dough into a large rectangle, about 1/4 inch thick.

Bake
Place the wrapped patties on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the dough is golden brown.

Remove from the oven, let cool slightly, and serve with the sautéed vegetables.
