Dough Preparation

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. In a separate bowl, mix the sourdough starter with warm water until well combined. Gradually add the wet ingredients to the flour mixture, stirring until a rough dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic. Add olive oil during kneading to enrich the dough.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Cheese Filling Preparation

    Prepare the Cheese Mixture

    In a medium bowl, combine the crumbled feta cheese, shredded mozzarella cheese, ricotta cheese, black pepper, and chopped dill. Mix until well incorporated.

Assembly and Baking

    Roll Out the Dough

    After the dough has risen, punch it down and divide it into two equal pieces. Roll each piece out on a floured surface into a large circle, about 1/4 inch thick.

    Fill the Dough

    Place half of the cheese filling in the center of each rolled-out dough circle. Carefully fold the dough over the filling to create a half-moon shape. Press the edges to seal, and use a fork to crimp the edges for added security.

    Egg Wash

    Beat the egg in a small bowl and brush the egg wash over the top of each placinta to give it a beautiful golden color when baked.

    Preheat the oven to 375°F (190°C). Place the filled placinta on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
