Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside, reserving a cup of the pasta water.

Vegetable Sauté

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add bell peppers, zucchini, and carrots, and cook for 5-7 minutes until slightly tender. Stir in cherry tomatoes and spinach, and cook for an additional 2-3 minutes until the spinach wilts.

Combine and Serve

    Combine Pasta and Vegetables

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.

    Serve

    Remove from heat and sprinkle with grated Parmesan cheese. Serve immediately while hot.
